Original Sake - Did you spit in this?
The first form of sake in Japan was called kuchikami no sake, which means “mouth-chewed sake”. Around 300BC, villagers would chew rice and nuts and spit them into a communal tub where the enzymes in their saliva would begin the fermentation process. When sake makers learned that they could skip the spitting up and add the enzymes directly (using Koji mold and a yeast), the practice stopped.
Making Sake Today
Rice Wine’s four main ingredients (rice, koji mold, yeast and water) are brewed much like beer by a brewmaster called a toji.
? Sake Rice: The specially selected “sake rice” is milled to remove the protein and oils in a process known as “polishing.” The more the rice is polished, the purer the starch and the smoother the sake. After polishing, the rice is steamed.
? Koji mold (Aspergillum oryaze): After the rice is steamed, this yellow mold is scattered onto the rice and allowed to grow in a dark place. As it grows, the koji converts the starch into sugar.
? Yeast and water: The toji carefully selects the yeast and water to be used, considering the purity and mineral content of the water, as well as the type of yeast. The yeast and water are added to the rice/koji to form the “mash”.
? Finishing the sake: The mash ferments for 2 to 6 weeks (the yeast converts the sugars into alcohol). Then it is “pressed” to extract just the liquid, which is filtered and pasteurized. The pasteurized liquid matures for up to 6 months before the toji adds just enough water to finish the sake at 15-20% alcohol. It is then bottled, shipped, and enjoyed. Kanpai!
Types of Sake
Sake types vary as much as wine. In Japan, over 46 different types of rice are combined with different yeasts, koji molds and waters in over 2,700 breweries to create countless distinct tastes.
But while there are probably thousands of different “sakes” in the market today, there are five major classifications of sake that you should know. They differ primarily by the degree to which the rice is polished.
Daiginjo: The highest class of sake, Daiginjo is light, fragrant, and fruity with no real aftertaste. It is brewed with rice that has been polished down by 50% or more, leaving it a very pure starch. Serve chilled or at room temperature. (Note: If the sake is labeled “Junmai-Daiginjo,” it was made without adding alcohol during the brewing process.)
Ginjo: Ginjo uses rice that has been polished down by 40-50%. A very good, sweet sake. Serve chilled or at room temperature. (Note: If labeled “Junmai Ginjo,” it was made without adding alcohol during the brewing process.)
Junmai: Junmai sake is pure rice wine with no alcohol added and at least 70 percent polished grain. Junmai sake has a bold taste and can be served at room temperature or warm.
Honjozo: Honjozo is brewed with rice that was polished by more than 30%. Some alcohol is added in the final fermentation process to mellow out the boldness you’d find in a Junmai. Serve at room temperature or warm.
Futsu: The previous classifications are all considered “special designation” sakes. Futsu is the term for regular rice wine. Most sake on the shelves is Futsu. It is made with rice that has been less than 70 percent polished, and has added alcohol.
There are further sub classifications such as Namazake, which is sake that has not been pasteurized. Namazake can include any of the first four classifications of sake and is served chilled.
Serving Rice Wine?
Rice wine is typically poured from a vessel called a tokkuri into a small cup called a choko. Some sushi bars will even serve sake in a small wooden box called a masu, which were originally used for measuring rice (180ml, or about 6oz). The masu can be used as a simple cup, or the server may place the choko inside the masu and use the masu as a way to catch the overflow of a full pour. This is just one of the ways you can get styled out at a sushi bar.
To warm your sake, place the tokkuri in a small pot of water that has been brought to boil and removed from the heat. Allow the tokkuri to sit in the water for about 5 minutes. When served, the bottom of the tokkuri should be warm to the touch but not too hot. In restaurants, a commercial sake warmer is often used.
Sake Drinks
Tamagozake:?Tamagozake, or “egg sake,” is sometimes referred to as sake-nog in America. In Japan, tamagozake has been used traditionally as a cure for the common cold. It is made by combining warm sake, sugar and a raw egg.
Saketini:?Rice Wine martinis are a popular way to enjoy sake.?To make a basic saketini, combine 2.5oz gin (or vodka) and 2 teaspoons of sake in an ice-filled martini shaker. Shake, strain, and garnish with an olive.?For a slightly different variation, combine 4oz vodka, 1oz sake, and a few slices of pickled ginger (gari) in a shaker. Shake, strain, and garnish with a toothpick of pickled ginger.
The Sake Bomb:?
What’s better than beer or sake? Beer and sake. But be warned, firing off a sake bomb is a sure way to change your plans for the evening.
