- medium red potatoes unpeeled, cut in 1-inch cubes - 6 item
- avocados, peeled, pitted and cubed - 2 item
- fresh lime juice 2

How to make avocado potato salad(makes 8 servings)
Dressing:1/4 c. fresh lime juice2 cloves garlic, crushed2 Tbsp. honey mustard2 tsp. sugar1 tsp. salt1 tsp. black pepper1 Tbsp. olive oil1/2 c. nonfat plain yogurt Assembly:1/2 c. sweet onion, chopped1/4 c. fresh cilantro leaves, chopped Cook's Notes: Salad can be prepared up to 3 hours in advance.Prepare Potatoes and Avocados: Boil diced potatoes in large pot until just tender. While potatoes boil, cube avocados and toss with 2 tablespoons lime juice; set aside. Drain potatoes and place in bowl of cold water. When potatoes have cooled, drain well and place in large salad bowl.
Make the Dressing: Whisk lime juice, garlic, mustard, sugar, salt, pepper, olive oil and yogurt in medium bowl. Taste dressing and adjust seasonings.
Assemble The Salad: Pour dressing over potatoes and toss. Gently fold in avocado, onion and cilantro.
Presentation: Serve at room temperature or cover tightly with plastic wrap and chill until serving.
