Ingredients/Compontents of Cheesecake cookies recipe
- 1/2 stick butter - 1/4 c
- packed brown sugar - 1/3 c
- flour - 1 c
- chopped pecans - 1/2 c
- currant jelly
- pkg - 1 oz
- sugar - 1/4 c
- egg - 1 item
- milk - 2 Tbsp
- lemon juice - 2 Tbsp
- vanilla - 1/2 tsp
How to make cheesecake cookies
Filling:1/4 c. currant jelly1 (8 oz.) pkg. cream cheese1/4 c. sugar1 egg2 Tbsp. milk2 Tbsp. lemon juice1/2 tsp. vanilla Preheat oven to 350°. For crust, cream butter in small mixing bowl. Add sugar and flour. Blend until mixture resembles cornmeal. Stir in pecans. Reserve 1 cup of mixture for topping. Press remainder onto bottom of 8-inch square baking pan. Bake 15 minutes. Cool. Spread jelly over crust.For filling, beat cream cheese and sugar in a small mixing bowl. Beat in egg and milk. Add lemon juice and vanilla. Turn into pan; sprinkle with reserved crumb mixture. Bake 30 minutes. Cool on wire rack; cut into bars or squares. Makes approximately 2 1/2 dozen cookies.
