Ingredients/Compontents of Cheesecake cookies recipe

  • 1/2 stick butter - 1/4 c
  • packed brown sugar - 1/3 c
  • flour - 1 c
  • chopped pecans - 1/2 c
  • currant jelly
  • pkg - 1 oz
  • sugar - 1/4 c
  • egg - 1 item
  • milk - 2 Tbsp
  • lemon juice - 2 Tbsp
  • vanilla - 1/2 tsp

How to make cheesecake cookies

Filling:1/4 c. currant jelly1 (8 oz.) pkg. cream cheese1/4 c. sugar1 egg2 Tbsp. milk2 Tbsp. lemon juice1/2 tsp. vanilla Preheat oven to 350°. For crust, cream butter in small mixing bowl. Add sugar and flour. Blend until mixture resembles cornmeal. Stir in pecans. Reserve 1 cup of mixture for topping. Press remainder onto bottom of 8-inch square baking pan. Bake 15 minutes. Cool. Spread jelly over crust.

For filling, beat cream cheese and sugar in a small mixing bowl. Beat in egg and milk. Add lemon juice and vanilla. Turn into pan; sprinkle with reserved crumb mixture. Bake 30 minutes. Cool on wire rack; cut into bars or squares. Makes approximately 2 1/2 dozen cookies.
