How to make decadent chocolate cake
Ganache:6 oz. dark chocolate, chopped3/4 c. heavy cream Preheat oven to 350°. Butter and flour a 10-inch cake pan. Melt butter and chocolate in double boiler. Set aside to cool. Beat egg yolks until light and fluffy. Slowly add sugar. Continue beating until mixture is pale yellow. Fold in melted chocolate. Sift in flour over the chocolate mixture, until it disappears. In a separate bowl, whisk egg whites until soft peaks form. Fold egg whites into chocolate mixture. Pour batter into prepared pan. Bake for 20 minutes, until toothpick comes out clean.For Ganache: Place cream in saucepan and bring to a boil. Slowly add hot cream to chopped chocolate. Pour over cooled cake and spread with spatula. You can double this recipe for a two-layer cake. Serves 12.
