- ground ginger - 2 tsp
- honey - 2 Tbsp
- low sodium soy sauce - 2 Tbsp
- boned, skinned chicken breast halves - 4 item
- green onion strips optional - 1 item
How to make quick ginger chicken
Combine ginger, honey and soy sauce in a small bowl; stir well and set aside. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Coat grill rack with vegetable cooking spray; place on grill over medium hot coals. Place chicken on rack and cook 4 minutes on each side, basting frequently with soy sauce mixture. Place chicken on serving platter; garnish with green onion strips, if desired. Yields 4 servings; contains about 201 calories per chicken breast half.
