Ingredients/Compontents of Yoss's favorite crab cakes recipe
- olive oil 2
- celery stalks, finely chopped - 2 item
- onion, finely chopped 2/3
- lump crabmeat with shells removed 1
- chopped fresh chives 1/4
- chopped fresh parsley 2
- flour 6
- large eggs - 3 item
- dry Italian breadcrumbs - 2 c
- mayonnaise
- fresh lemon juice 2
- Dijon mustard 2
- cayenne pepper 1/2
How to make yoss's favorite crab cakes
Seasoned Mayonnaise:1 1/2 c. mayonnaise2 tsp. fresh lemon juice2 tsp. Dijon mustard1/2 tsp. cayenne pepper Seasoned Mayonnaise: Combine all ingredients and thoroughly mix.Set aside 1/2 cup of Seasoned Mayonnaise mix for crab cakes. Heat 2 tablespoons olive oil in a heavy large skillet over medium heat. Add celery and onion. Saut?© until tender, about 5 minutes. Transfer to large bowl. Stir in crab, 2/3 breadcrumbs, chives, parsley and reserved 1/2 cup mayonnaise. Season crab mixture with salt and pepper to taste. Form mixture into 12 cakes. Arrange on baking sheet. Can be made 1 day ahead.
Place flour in small bowl. In different bowl, whisk eggs. Place remaining 2 cups breadcrumbs in another bowl. Coat each crab cake with flour. Dip floured cake into beaten egg, then into breadcrumbs, coating completely. Heat 1 tablespoon vegetable oil in large skillet over medium heat. Add crab cakes in batches. Cook until golden brown and heated through (about 5 minutes). Add more oil to pan as needed. Serve cakes hot with Seasoned Mayonnaise.
